
PEA & MINT PESTO
This is best used as a dip, but I especially like it on toast under eggs.
Different nuts and greens will impart different flavours; bear this in mind when choosing what to add to your pesto. Add wasabi and lime for a dip that leans more Asian.
Ingredients:

Nuts

Garlic
-
Peas
-
Mint
-
Any other greens you want to add

Lemon juice and zest

Olive oil

Parmesan, grated

Black pepper
Method:

Blend the nuts and garlic with some oil. Biting into a large chunk of garlic is no fun, so blend well.

Add the peas, mint, optional other greens, lemon juice and zest, and oil and blend again.

Add parmesan slowly, blending with each addition.

If you think you need more oil, add some. Blend again. Repeat until its the right consistency.

Add salt and black pepper to taste.

Use on toast, in pasta or as a dip. Loosen with water and more lemon juice for a dressing.
